Chicken and Rice Casserole

I'm not really very good at just throwing stuff together so when this turned out SO good I decided I'd better write it down so maybe I could make it again sometime.  Oh!  And my husband is NOT into casseroles so please don't tell him that is what this is LOL... he had me put his serving in a tortilla shell and put sour cream on it!

I'm sorry I don't have a picture, this is the first recipe I've ever made on my own and written down, I had no idea it would taste good.  The next time I make it I will definitely get a picture and come back and edit this post.

So... here we go!

Ingredients:
1 cup uncooked wild rice cooked according to directions on package
2-3 chicken breasts cooked and cubed
(I used 6 tenderloins, cooked in about 1/2 tbsp butter with Weber Roasted Garlic and Herb Seasoning)
1 can cream or broccoli
1 block of cream cheese
1/2 red bell pepper
Shredded Cheese

I cooked up my rice according to the directions on the package.  While the rice was cooking I cooked up my chicken tenders and cubed them up.  Once the chicken was done cooking I added the diced red pepper and cream cheese so it could start melting in.  Once the cream cheese was melted in I added the rice and can of cream of broccoli and stirred until well combined.  Next I added everything to a glass baking dish and covered it in shredded cheese (probably about 2 cups, I didn't measure).  Bake at 350° for 15 minutes.

The moment I saw this kit I knew I had to have it.  I can definitely see lots of great stuff coming from this extremely versatile kit.  Sure, it's great for goofy self portraits but it's also great for any number of other LO's as well.  Just look how I used it!

Shine From Within: You Are Magnificent! by Tangie Baxter

I never fail to be amazed by the talent that is Tangie Baxter.  Every time I create a new page with her designs I feel a tremendous amount of pride to be a part of her Creative Team.  One of Tangie's most recent projects that I worked with is You Are Magnificent! (part of the Shine Project at SBG).  This is an amazing collection put together by a small group of girls over at SBG (Captivated Visions, Rosey Posey and Tangie Baxter) who hope to inspire you to... Tell Me Your Secrets by Inspired Designs

I had so much fun playing with this new kit by Inspired Designs.  It was sort of a challenge for me that I didn't even realize was happening.  I started with the yellow paper and added some brown elements and before I knew it I had only used these colors.  Well, then I got stuck and didn't know what to do to finish the page.  I ended up recoloring the alpha for my title, and tucking a few things in here and there but I'm pleased with how it turned out.

AJC 2013 February {13} Collection by Tangie Baxter

I am LOVING Tangie's ginormous AJC collections.  There is so much stuff crammed in there to play with.  And I to enjoy creating my Quote Book pages.  I think that's all I'd make if I didn't keep myself reigned in LOL.  Not that it's bad to do that, it's just that I have to remind myself that my scrapbook pages are important also.
